WHAT IS SAKE ?

What is Japanese Sake?

Sake is an alcoholic beverage made from polished (white) rice.
With its long history, sake is a part of Japanese culture.
Sake is a fermented beverage like wine and is not distilled like a spirit. Its alcoholic strength is around 15-17% abv. (vs. 12-14% abv. of wine). Major ingredients of sake are short-grained non-glutenous rice,
water, moldy rice called koji and yeast. Sake-making processes involve saccharification (starch-to-sugar conversion) and alcohol fermentation.

Sake that can be expected to be both beautiful and healthy

Sake is rich in vitamins, minerals, amino acids, organic acids and many other nutrients that are good for the body. It is said that there are over 700 different nutrients in sake.
The most notable of these is the fact that it contains all the essential amino acids, which cannot be produced by the human body. The volume of amino acids is
about 10 times that of wine. Sake helps to obtain a beautiful skin, and to promote blood -circulation (easing a stiff neck and recovering from fatigue), anti-aging, and health (as preventive medicine).

How to drink Japanese Sake ?

Probably sake is the only alcoholic beverage you can enjoy drinking at different temperatures ranging from around 0 to 60 degrees Celsius, depending on the type and style of
sake and the food to accompany with. You will pour sake, cooled or warmed, into a small cup made of earthenware, porcelain, wood, glass, etc. or a larger glass, wine glass, etc. Wine glasses may be recommendable to enjoy more of aroma. You can also make cocktails of sake.

I believe that the sake brewers throughout the thousands of years of history felt the same way.

Otherwise, it would not have lasted until the present day.
The sake has been handed down from generation to generation, not resting on the laurels of the present, but seeking a new brilliance.

The fact that they have been handed down is proof that they did not rest on the laurels of the past, but sought a new brightness and continued to change.

Located in Aichi prefecture.
The main Brand is “NITO(two rabits)”

Maruishi Brewing started making sake in Okazaki, Aichi Prefecture in 1690. Since then, we have been making sake for more than 330 years.
Okazaki City, where the storehouse is located, has an old history of the birthplace of Lord Tokugawa Ieyasu, who built the Taihei era of Edo, and on the other hand, it is a land where you can feel the rich nature surrounded by mountains and rivers. They have tried to create the best balance between two contradictory things: flavor and aroma, acid and umami, heavy and light, sweet and spicy, complex and beautiful, so the brand name is “NITO” . You know the proverb, “They who runs after two hares will catch neither.”

But it is “They who runs after to fares will catch both.”

JUNMAI NITO MANZAI 70

Sake with a sense of terroir where all the rice and water are locally produced.
A sweet, easy-drinking drink for women, with voluptuous fruitiness and a dense aftertaste.

JUNMAI NITO satin

It is Silky and smooth sake. You can enjoy a fresh, fruity taste and a lightness of 13% alcohol by volume. Recommended with carpaccio and other appetisers.
 
 
 

MATSUOKA
BREWERY

Located in Saitama prefecture. The main Brand is “MIKADOMATSU”
Founded in 1851 (the end of the Edo period) The preparation water is a special limestone-based hard water pumped from 130 meters underground (hardness 148 mg/l). As a preparation water for sake, this water of carbide water has no iron content, so it is unprocessed. Using this water that promotes fermentation of yeast, it is prepared in a low-temperature fermentation tank to control the fermentation while placing the yeast in a harsher environment. As a result, although it has a fragrance and sharpness, it brews like sake with a dense rich flavor. We use rice carefully selected from all over the country.

KETOHARE

Junmai Ginjo Sake brewed with primur yeast for wine, the first in the sake industry. The scent is a gorgeous and strong banana and mango-like scent. It has the astringency of red wine tannins, but the aftertaste is the refreshing feeling of sake. It’s sweet but not persistent, yet it has a lingering finish. It is a new sake that makes you want to marry with cheese etc.

TORANOMAKI KURO

It is JUNMAI DAIGINJO. It is aptly described as a “man’s sake with a lot to live up to”. First of all, it is dry, with a full sake flavor and a crisp, clear throat. The ginjo aroma is just strong enough to make you feel a little bit insistent, and while it is very drinkable, it also makes the sake go down well.

FUJII SHUZO

Located in Hiroshima prefecture. The main Brand is “Ryusei”
This brewery, which has been in business for over 150 years. The land is blessed with clean water so that groundwater is used as tap water. At the same time, a rich food culture has been built with abundant seafood. FUJII Sake Brewery’s sake is an in-meal sake that you can enjoy with your meal. “Sake that enhances the individuality of food” is our definition of in-meal sake. While retaining a strong presence, it never interferes with food. The synergistic effect makes it more delicious than enjoying it individually. They are working every day to make sake with the aim of making such sake.

RYUSEI NAGOMINO
KARAKUCHI

When you put it in your mouth, the mellow aroma of rice spreads and enhances the taste of the ingredients, and the sharp acid comfortably wash away the odor and fat. It is a rich type of sake that you can feel the sweetness of Jiuqu even though it is dry, and you can enjoy it in a wide range of temperatures from cold sake to hot sake.

YORUNOTEIO

It is a mild, mild sake with a smooth taste, mainly made from Hachitan-Nishiki rice, the best rice for sake brewing in Hiroshima Prefecture, and brewed with soft water. The alcohol content is kept low while retaining a strong koji and rice flavor. It can be enjoyed at a wide range of temperatures, from cold sake to hot sake.

Located in Tochigi prefecture. The main Brand is “SENKIN”
The symbol of the SENKIN is the “crane” that lives in the hermitage. Affectionate red. Traditional white. Innovation black. When all of them resonate A unique and unique product is born. SENKIN make it important like, “Nature”, “Organic”, and “Domaine”. These days, they have a challenge to make SAKE with wooden tub which is old-fashioned construction.

Modern SENKIN MUKU

MUKU means Innocent and rustic. The basic and standard sake of the SENKIN brand. The fresh scent of apples and La France overflows, and the delicate taste spreads in your mouth.

SENKIN ORGANIC NATURE

The newly introduced wooden vat is used to bring out the potential of Kame-no-o in a more organic way, resulting in an overwhelmingly refined and beautiful nama-moto. The aroma is fruity, reminiscent of banana and white peach, and the mouthfeel is smooth and stress-free. The supernatural structure of the liquid will naturally blend into your body.

KOIMARI SHUZO

Located in Saga prefecture. The main Brand is “SAKI”
Founded in 1909. In Saga prefecture, it is famous for Arita porcelain. Porcelain baked in Arita during the Edo period was exported from the port of Imari, so it became popular under the name Imari ware. From the 1650s, Arita porcelain began to be exported to European countries by the Dutch East India Company. It features a beautiful white color that has been dubbed “white gold” by European aristocrats. In recent years, it has won many awards in domestic and overseas contests, and it is a highly acclaimed brewery, such as being installed in the first class of major airlines.

SAKI Ginjo

The top note of the fragrance is a citrus scent. The middle note is a rich fruity scent of banana and melon. The taste has a smooth texture. Low acidity, clean and sweet.

TROPICAL

This sake is brewed using precious heirloom Omachi rice, which creates a more layered depth of flavor. This kind of rice is hard to polish to 50%, but the effort is worth it. Koimari “Tropical” Junmai Daiginjo transports you to a relaxing island getaway with its juicy texture and notes of pineapple and mango. Try serving this sake on the rocks or even in a cocktail for some next- level vacation vibes.
